Kris’ Eggless Cookies for Chloe                Yield: 3 ½ dozen


1 cup soft butter                                              1 ½ cups whole wheat flour

1 cup brown sugar, packed                          3/4 cup unbleached all-purpose flour

1/3 cup granulated sugar                              ½ tsp. baking soda

1 tsp. vanilla                                                    ½ tsp. baking powder

2 Tbsp. EnerG Egg Replacer* powder          ¼ tsp. salt

½ cup warm water                                           ¼ tsp. guar gum**

1 cup raisins                                                    1/2 cup slivered almonds

Preheat oven to 375°. In a large mixing bowl, cream butter and sugars. Add vanilla. Thoroughly mix the Egg Replacer powder with the warm water before adding it to the butter/sugar mixture. Stir the wet ingredients until thoroughly mixed.

In a smaller bowl, mix all the dry ingredients except the raisins and almonds. Stir the dry ingredients into the wet a little at a time, mixing thoroughly before adding more. When all the dry ingredients are mixed into the wet ingredients, stir in the raisins and almonds.

Using a 4-tsp. cookie scoop, drop dough balls onto an ungreased baking sheet, about 2” apart. Make sure oven rack is in the center of the oven. Bake cookies for 13 minutes. Remove to a wire rack to cool.

Makes about 4 dozen.

*EnerG Egg Replacer can be found in health food stores and larger grocery stores.

**Guar gum is an emulsifier, often found in commercial chocolate. It is available in health food stores.
